CABERNET SAUVIGNON 2005
As usual, this wine is 100% Cabernet Sauvignon from our prized old Cabernet vines planted in 1988, and known as A BLOCK. These vines are dry grown, affording maximum concentration of flavours.
2005 vintage in Margaret River, whilst outstanding, could have been recorded as “the vintage of all vintages”, had it not been for a few rain events in March and April.
Ripening of all varieties was even and optimum, with Cabernet sauvignon especially, full flavoured and elegant.

A dark brick red colour.
A rhapsody on the nose with brooding red berries, lavender, bay leaf, mint. peppermint and abundant floral aromas. Complex camphor, cigar box and briary characters round out an elegant and attractive nose.
The palate is long with smooth ripe tannins. The dominant flavours coating the palate are luscious berries and mint. This is a fruit driven wine integrated to perfection and rewarding the bottle age allowed it, in keeping with the company philosophy to release wines when ready for best enjoyment.
The fruit was handpicked on 6th April 2005.
Prior to ferment the crushed fruit was cold soaked for 5 days, extracting extraordinary colour.
Open fermented, gently pumped over and skins contact for 12 days.
Maturation for 20 months in 100% French oak barrels, 50% new and 50% second use.
