CABERNET SAUVIGNON 2006

THE DOC

BACKGROUND

All Heydon Estate wines are the product of single vineyards with fruit estate grown on our old Wilyabrup property in the heart of the Margaret River appellation.
As usual, this wine is 100% Cabernet Sauvignon from our prized old Cabernet vines planted in 1988, and known as A BLOCK. These vines are dry grown, affording maximum concentration of flavours.
The 2006 vintage in Margaret River was unusually cool and wet, impeding ripening.
Whilst an outstanding vintage for our Chardonnay, all producers struggled to achieve optimum ripeness for later “reds”. Patience, for those willing, was rewarded however, but we have decided to re name this wine, being stylistically lighter, as “The DOC”. This of course, was the great WG’s nickname.

VIGNERON GEORGE HEYDON’S COMMENTS

A lovely deep ruby colour.
A complex nose which opens to show black fruits (blackberry), chocolate, tobacco, eucalyptus and hints of camphor and spearment. The floral components present as a potpurri of rose petals. A very attractive and complex nose.
The palate is upfront and generous with good fruit expression. Chalky tannins provide a nicely balanced backbone, though the finish is a little shorter than our usual WG Grace. A remarkable wine from the difficult 2006 vintage. Drink from 2012.
Food match: ideal with charcuterie, Asian flavoured roast meats and rack of lamb.

VINIFICATION

The fruit was handpicked on 27th April 2005.
Open fermented, gently pumped over and skins contact for 14 days.
Maturation for 20 months in 100% French oak barrels, 50% new and 50% second use.
