CABERNET SAUVIGNON 2007

WG GRACE

BACKGROUND

All Heydon Estate wines are the product of single vineyards with fruit estate grown on our old Wilyabrup property in the heart of the Margaret River appellation.
As usual, this wine is 100% Cabernet Sauvignon from our prized old Cabernet vines planted in 1988, and known as A BLOCK. These vines are dry grown, affording maximum concentration of flavours.
The 2007 vintage was one of the earliest on record, with an early flying start to Spring.
The warm dry ripening period was ideal for perfect cabernet phenolic and flavour development.
The deep rooted old vines never stress.
2007 was a standout vintage for the Margaret River appellation.
A fine vintage indeed for us.

VIGNERON GEORGE HEYDON’S COMMENTS

An excellent, clear crimson purple colour.

The nose is intense, rich and complex, with dark black fruit to the fore and a hint of menthol, herbs and spicy cigar box.

A classic Cabernet palate, mouth filling, rich blackberry fruit, cooling mint, perfectly integrated tannins and a long, elegant finish.

Another beautifully articulated Cabernet.

VINIFICATION

The fruit was handpicked on 11th March 2007.

Open fermented, gently pumped over and skins contact before being transferred to barrel for final fermentation, adding complexity.

Maturation for 20 months in 100% French oak barriques, 60% new and 40% second use.
