CABERNET SAUVIGNON 2008
All Heydon Estate wines are the product of single vineyards with fruit estate grown on our old Wilyabrup property in the heart of the Margaret River appellation.
As usual, this wine is 100% Cabernet Sauvignon from our prized old Cabernet vines planted in 1988, and known as A BLOCK. These vines are dry grown, affording maximum concentration of flavours.
The 2008 vintage was low yielding following adverse weather in the previous Spring.
The ripening period was however, warm and even, ideal for full flavour development and silky tannins of our reds. The deep rooted old vines never stress. 2008 was a stunning vintage for Margaret River appellation Cabernet.
VIGNERON GEORGE HEYDON’S COMMENTS
An excellent, deep crimson purple colour. The nose presents as rich and complex, cassis, fragrant violets, spearmint, alluring. All complemented with cedar and cigar box aromas, indicative of highest quality well handled oak.
A classic Cabernet palate, mouth filling, fleshy, rich blackberry fruit, cooling mint, perfectly integrated fine grained tannins, and a long elegant finish. Another beautifully articulated Cabernet.
The fruit was handpicked on 16th March 2008.
Open fermented, gently pumped over and skins contact before being transferred to barrel for final fermentation, adding complexity.
Maturation for 20 months in 100% French oak barriques, 60% new and 40% second use.
Acidity: 7.2 g/l
