All Heydon Estate wines are the product of single vineyards with fruit estate grown on our old Wilyabrup property in the heart of the Margaret River appellation.
This wine is 100% Mendoza clone from our old Chardonnay block.
The 2007 vintage in Margaret River was the earliest on record, only nine months on from the very late 2006 vintage. An early warm spring set up an early flowering and ripening season, and the vines were able to capitalize on the good health and reserves afforded by the cooler 2006 vintage and following wet winter. As usual, an outstanding Chardonnay has been crafted.

The wine is an attractive medium straw colour. Its nose shows quality oak treatment with nuances of vanilla and roasted hazelnut enhancing a rich ripe fruit salad of yellow peach and rockmelon, with an intriguing hint of lemon myrtle.
The theme continues on the palate with tangy pineapple, grapefruit, ripe yellow peach and roasted hazelnut nuances all contributing to a rich creamy texture and a long finish. This is a wine of substance, reflecting the very different season from 2006, and will deliciously complement food with rich flavours and rich or creamy sauces.
The fruit was handpicked on 24th February 2007.
Fruit was whole bunch pressed and fermented in barrel, with a mix of natural and inoculated yeast strains. Battonage for 2 months. 10% was allowed to undergo malolactic ferment providing textural complexity.
Maturation for 10 months in 100% French oak barrels, 50% new and 50% second use.
